MINESTRONE BEEF SOUP 
1 lb. ground beef
1 c. diced onion
1 c. cubed raw potatoes
1 c. sliced carrots
1/2 c. diced celery
1 c. shredded cabbage
2 c. cooked tomatoes
1 sm. bay leaf, crushed
1/2 tsp. thyme
1 basil leaf
1 1/2 qt. water
4 tsp. salt
1/8 tsp. pepper
1/4 c. rice
1/4 c. shredded cheddar cheese

Cook ground beef and onions in a large pan; brown meat slightly. Add potatoes, carrots, celery, cabbage, tomatoes; add water and bring to a boil.

Sprinkle rice into the mixture; add remaining ingredients, cover and simmer 1 hour. Serve as a main dish with cheese.
