RED BEANS AND RICE SALAD 
2 c. cooked rice
1 can (about 1 lb.) red kidney beans, drained
1/2 c. diced onions
1/2 c. diced green peppers
1/2 c. diced or coarsely grated carrots
1/2 c. sliced green olives
2 hard boiled eggs

DRESSING:

2/3 c. Marzetti's Parmesan cheese dressing or 2/3 c. mayonnaise and
1/4 c. Parmesan cheese, grated
1 tsp. salt
2 tbsp. vinegar
1/2 tsp. pepper
2 tsp. sugar

Toss all ingredients together, add dressing and toss again. Let stand in refrigerator at least 2 hours or overnight.
