COCONUT CREAM DESSERT 
80 Ritz crackers, crushed
1 1/2 sticks butter, melted
1/2 gal. vanilla ice cream, softened
1 1/2 c. milk
2 regular instant coconut cream pie filling
2 pkgs. Cool Whip

Crush Ritz crackers. Take out 1 cup and put aside. Melt butter and mix with remaining crackers and put in 9x13 inch pan. Combine ice cream and milk. Add pie filling. Mix with mixer. Pour on top of crackers. Top with Cool Whip. Sprinkle reserved 1 cup Ritz crackers on top. Refrigerate.

This is also very good when you use pistachio instant pudding.
