CHICKEN SALAD 
1 poached chicken, skinned and meat pulled from the bones
2 tbsp. chopped parsley
1/4 c. mayonnaise or to taste
Heavy grinding of pepper
2 dashes cayenne pepper
Salt to taste
1 rib celery, minced
5 scallions (white part), minced
2 tbsp. sherry vinegar or 2 tablespoons dry sherry and 1 tbsp. white wine vinegar

Cut chicken meat into 1/2 inch cubes. Place in bowl and stir in ingredients. Mix at least an hour before serving to allow flavors to blend. Retaste and adjust seasonings as desired.
