MEXICAN CASSEROLE 
1 lb. ground beef (or chicken or turkey)
1 onion, chopped
1/8 tsp. garlic powder
1 (4 oz.) can chopped green chili
1/2 c. chopped mushrooms
1 (15 oz.) can tomato sauce
1 tbsp. chili powder
2 c. grated cheese (Cheddar or Colby)
2 c. crushed corn chips

Brown meat. Add onion, garlic powder, green chili, mushrooms, tomato sauce and chili powder. Cover and simmer for 20 minutes, stirring occasionally.

Layer 1/2 meat, 1/2 cheese, 1/2 chips in a casserole dish. Repeat for remaining ingredients. Bake at 350 degrees (covered) for 45 to 60 minutes.
