CHOCOLATE CHIP - PECAN MUFFINS | |
4 c. flour 1 c. firmly packed brown sugar 4 tsp. baking powder 1/2 tsp. salt 1 c. semi-sweet chocolate chips 1/2 c. chopped pecans 1/2 c. butter 1 1/2 c. milk 2 lg. eggs 1 tbsp. vanilla extract 2 tbsp. granulated sugar Heat oven to 375 degrees. Makes 18-20 muffins. Generously grease and flour muffin cups, or use paper baking cups. In a large bowl, with a large fork, combine the flour, brown sugar, salt and baking powder. Add chocolate chips and pecans. In a 1-quart saucepan, melt the butter. Cool it slightly, and with a wire whisk stir in the milk, eggs, and vanilla. Stir until just moistened. The batter will be lumpy. Divide into prepared cups. On each top sprinkle with granulated sugar. Bake 15 to 20 minutes or until cake tester comes out clean. |
