TACO RICE 
1 lb. ground beef
1 onion
1 (16 oz.) can tomatoes
1 c. rice, uncooked
1 env. taco mix
1 c. shredded cheddar cheese
2 c. shredded lettuce

Brown ground beef and onion, drain off fat. Drain tomatoes, reserving juice. Chop tomatoes. Add water to tomato juice to make 2 1/2 cups liquid. Add tomatoes, liquid, rice and taco mix to meat. Cover and simmer until rice is done, about 25 minutes. Stir occasionally. Top with cheese and lettuce before serving.
