PORK OR CHICKEN ADOBO 
2 lbs. pork or chicken, cut into pieces, about 2 x 1 1/2 inch
1 head garlic, lg., crushed
Salt to taste
Soy sauce to taste
1 tsp. black pepper
1 tbsp. lard or Crisco
2 c. water
1/2 c. vinegar

Place meat in saucepan. Add vinegar, garlic, pepper, salt, soy sauce and water. Cover and cook slowly until meat is tender and most of broth has evaporated, only 1/4 cup remains. Add Crisco and fry until brown. Serve hot or cold.
