BUTTERSCOTCH PIE 
1 c. brown sugar
1/4 c. flour
2 eggs
1/2 tsp. vanilla
1 c. whipping cream (for top)
1 c. milk
3 tbsp. butter
1/4 tsp. salt
2 tbsp. sugar

Melt butter in top of double boiler, add half of brown sugar and stir over fire until syrupy. Mix flour and salt with rest of sugar and place in double boiler with milk. Add other sugar and cook 15 minutes. Stir occasionally. Beat eggs and mix with a little of the filling and return to double boiler. Remove from heat, add vanilla and when cool, place in baked pie shell. Cover with 1 cup of cream, whipped and sweetened.
