OATMEAL ICEBOX COOKIES 
1 c. shortening
1 c. sugar
1 c. brown sugar
2 beaten eggs
1 tsp. vanilla
1 1/2 c. flour
1 tsp. baking soda
1 tsp. salt
3 c. oatmeal
1/2 c. nuts
1/2 c. shredded coconut
1/2 c. raisins, if desired

Cream shortening, sugar, and brown sugar. Add eggs and vanilla. Sift flour, soda, and salt. Add to creamed mixture. Mix in remaining items. Shape into rolls and chill. Slice and place on greased cookie sheets. Bake at 350 degrees for about 10 minutes.
