CHICKEN OR BEEF FAJITAS 
1 tbsp. ground coriander
3 tbsp. minced fresh thyme or 2 tbsp. dried thyme
3 garlic cloves, minced
4 lbs. chicken or beef

Preheat grill. Mix coriander, garlic and thyme in a small bowl to create a paste. Coat strips of chicken or beef with paste and prick skin with fork. Marinate for 15 to 20 minutes then grill to your liking.

To make fajitas use flour tortilla and roll with sauteed onions, peppers, chicken or beef, lettuce, tomato and cheese.
