TOMATO AND GREEN PEPPER SALAD 
5 lg. green peppers, roasted & peeled
5-6 lg. tomatoes, peeled & seeded
2 cloves garlic, crushed
Pinch of paprika
1/4 tsp. cumin
3 tbsp. olive oil
2 tbsp. lemon juice
Salt & pepper

Cut peppers and tomatoes into small dice. Combine in serving dish. Combine remaining ingredients and whisk together lightly. Toss gently with peppers and tomatoes. Serve at room temperature. Serves 4-6.
