FRUIT NUT CAKE 
3 c. whole mixed nuts
1 lb. pitted dates
1 (8 oz.) jar maraschino cherries
3/4 c. all-purpose flour
3/4 c. sugar
1/2 tsp. baking powder
1/2 tbsp. salt
3 eggs
1 tsp. vanilla

Put nuts, dates, and cherries in a large bowl. Sift flour, sugar, salt, and baking powder over fruit nut mixture. Mix with hands until nuts and fruit are thoroughly coated. Beat eggs until foamy. Add vanilla; stir into dry mixture and blend well. Turn into greased loaf pan. Bake at 300 degrees for 1 hour 45 minutes (until toothpick comes out clean).
