PINEAPPLE PILAF | |
3 tbsp. butter 1 c. rice 2 tsp. sesame seeds (optional) 1 c. (9 oz. can) pineapple tidbits 2 c. chicken broth 1 1/2 tsp. salt 1 tbsp. lemon juice 3 or 4 green onions 1/2 tsp. grated lemon rind Melt butter in a saucepan; add rice and sesame seeds. Saute, stirring now and then, over moderate heat until rice and seeds begin to turn golden. Stir in syrup drained from pineapple, broth, salt and lemon juice. Bring to a boil, lower heat, cover pan tightly and simmer 15 minutes. Cut onions into 1/4" diagonal slices including some of the green tops. Add onion, lemon rind and pineapple tidbits to rice. Cover and cook 5 to 10 minutes longer, until rice is tender and has absorbed the liquid. Makes 5 or 6 servings. |
