CAJUN CATFISH 
Yellow cornmeal
4 tbsp. hot sauce
1 1/2 lbs. catfish
4 tbsp. mustard

Cut catfish in small pieces. Mix hot sauce with mustard; dip strips in this mixture and let marinate 2 to 4 hours. Then dip in yellow cornmeal. Fry in hot oil until brown. Serves 4.
