BUTTERMILK GRIDDLE CAKES 
2 c. sifted all-purpose flour
1 tsp. baking soda
1/2 tsp. salt
1 tbsp. sugar
2 eggs, well beaten
2 c. buttermilk
2 tbsp. melted shortening

Sift together dry ingredients, combine eggs and buttermilk; stir into flour mixture. Beat until smooth. Add shortening. Bake on hot griddle. Serve with butter and syrup. Makes about 18.
