MEXICAN CHICKEN 
1 frying size chicken
1 can cream of mushroom soup
1 can cream of chicken soup
2 c. chicken broth
1 can Ro-Tel tomatoes, diced
1 lg. bag Dorito chips
2 onions, slices
1 1/2 lb. Velveeta cheese
6-8 c. Minute Rice

Boil, debone, and cube chicken. Mix soups, Ro-Tel and broth together. In a 6 quart casserole layer ingredients in this fashion: 1/2 Doritos, 1/2 chicken, 1/2 onions, 1/2 liquids, and 1/2 cheese. Repeat layers. Bake at 350 degree oven for 40 minutes. Serve over Minute Rice. Serves 8.
