ORANGE NUT BREAD 
1 med. orange
2 tbsp. shortening, melted
1 tsp. vanilla
1 egg, beaten
1 c. sugar
1/4 tsp. salt
1 tsp. baking powder
1 tsp. baking soda
1 c. flour
1/2 c. chopped nuts

Squeeze juice from orange into measuring cup (1 cup). Fill cup with boiling water. Grind orange rind and add to diluted juice. Stir in shortening, vanilla, egg and sugar. Add sifted dry ingredients. Beat well. Stir in nuts. Bake in greased 1-pound loaf pan for 1 hour at 350 degrees. Freezes well.
