PAPPY'S STUFFING 
1 box croutons
1 c. green pepper, diced
1 c. onions, diced
1 c. celery, chopped
2 tbsp. oil
1 1/2 lbs. sausage
1/2 tsp. salt
Dash of pepper

Soak croutons and drain. Simmer green peppers, celery and onions in oil 20 minutes. Add sausage, salt and pepper. Cook on low heat 1 hour, stirring often. Add croutons and cook 1 additional hour, stirring often.
