CHICKEN AND SHRIMP DIAVOLO | |
1 lb. chicken breasts, boned, skinned, cut in 1-inch pieces 3/4 lb. firm shrimp, peeled, deveined, cut in halves 2 tbsp. olive oil 2 lg. cloves fresh garlic, crushed 1 lg. green pepper, coarsely chopped 1 lg. onion, coarsely chopped 1 tsp. basil 1 tbsp. oregano 1/2 tsp. red pepper flakes, crushed 1 (4 oz.) can mushrooms, stems, pieces 1 (15 oz.) can stewed tomatoes, drained 1 (4 oz.) can tomato sauce Salt to taste 1 tbsp. fresh parsley, chopped Prepare chicken and shrimp. Heat olive oil in heavy pan. Saute garlic lightly. Add green pepper and onion and cook until tender. Add chicken pieces and saute just until tender. Add shrimp and cook 3 minutes, stirring constantly. Add basil, oregano, red pepper and mushrooms. Cook and stir 1 minute. Add stewed tomatoes, tomato sauce, salt and parsley. Cook 8 to 10 minutes over low heat. Serve over rice or linguine. |
