RAISIN - OATMEAL MUFFINS 
1 1/2 c. boiling water
1 c. old fashioned oatmeal
1 1/2 c. flour
2 tsp. cinnamon
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 c. butter
1 c. brown sugar
1 c. white sugar
2 eggs
1 tsp. vanilla
1 c. chopped walnuts
1 c. coconut
1 c. raisins

Pour boiling water over oats. Let stand 30 minutes. Stir next 5 items; set aside. In medium bowl cream butter and sugar. Beat in eggs, add vanilla. Stir in flour mixture and add remaining ingredients. Bake at 350 degrees for 20 to 25 minutes. Makes 30 muffins.
