CHERYL'S COUNTY FAIR ZUCCHINI
BREAD
 
3 eggs
1 c. oil
1 1/2 c. sugar
1 tsp. salt
3 tsp. cinnamon
2 tbsp. grated orange peel
2 c. grated zucchini
3 tsp. vanilla
3 c. flour
1 tsp. baking soda
1/4 tsp. baking powder
1 c. chopped walnuts

Beat egg yolks until light and fluffy. Add the oil, sugar, salt, cinnamon, orange peel, zucchini and vanilla. Mix well.

Combine the flour, soda, baking powder and walnuts and add to above mixture. Bake at 325 degrees for 1 hour. Makes 2 loaves.
