MANHOLE COVERS OR CRACKED WHEAT
PANCAKES
 
2 c. whole wheat flour
1/2 c. cracked wheat (optional)
3 1/2 tsp. baking powder
Salt to taste (3/4 tsp. maximum)
1 egg, beaten
1 3/4 to 2 c. milk
1/4 c. cooking oil

Place flour, baking powder, and salt in bowl, mixing lightly. Beat egg, add 1 3/4 cup milk and oil and blend. Stir into dry ingredients. Add enough milk to make it pourable. Cook on hot griddle. Tastes great with peanut butter and honey, molasses or jam. Also good without peanut butter.
