MICROWAVE PEANUT BRITTLE 
1 c. sugar
1/2 c. corn syrup
1 3/4 to 2 c. unsalted dry roasted peanuts
1 tsp. butter
1 tsp. vanilla
1 tsp. baking soda

Generously grease large baking sheet, set aside. Combine sugar and corn syrup in 2 quart glass measure. Cook on High, 4 minutes, stir in peanuts with wooden spoon and cook on High 4 minutes.

Stir in butter, vanilla, cook on High 2 minutes. Add baking soda; stir until mixture is light and foamy.

Pour onto prepared sheet. Spread quickly to edges. As candy cools stretch to a thin sheet using palms of hands. Cool and break into pieces.

Since microwave ovens vary in power, you may need to adjust your cooking time.
