CARAMEL ICING 
2 c. dark brown sugar
1 1/2 c. granulated sugar
2 tbsp. white corn syrup
1 c. plus 2 tbsp. whipping cream
1/4 c. butter

Cook all ingredients except butter until mixture forms a very soft ball when tested in cold water. Remove from heat; add butter and cool until lukewarm. Beat until creamy and spread between layers, on sides and on top of cake. Serve small pieces.
