BAKED STUFFED ONIONS | |
6 lg. onions 1/2 tsp. salt 2 tbsp. oil 1/4 lb. ground beef 1 c. cooked rice 1 egg yolk 1/2 c. bread crumbs 1/2 tsp. salt 1/2 tsp. pepper 2 tbsp. melted butter 2 tbsp. grated Parmesan cheese 1/2 c. bread crumbs 1 tbsp. chopped parsley 1. Cut off root, peel and rinse onions. Cut a 1/2 inch slice from the top of each onion. Cook onions, uncovered, in salted water to cover for 10 to 15 minutes or until slightly tender. Drain well, cool. 2. Heat oil in skillet; add ground beef and saute until browned. 3. Scoop centers out of onions, chop and add to ground beef. Saute until golden. 4. Combine rice, egg yolk, salt, pepper and bread crumbs with meat mixture. Fill onions. 5. Mix together melted butter, cheese, parsley and bread crumbs. Spread over top of onions. Bake in a greased casserole in a 350 degree oven for 1 hour. Serves 6. |
