PAT'S PUMPKIN PIE 
1 c. flour
1/2 tsp. salt
1/3 c. Crisco, plus 1 tbsp.
3 tsp. water
2 eggs
2 c. pumpkin
3/4 c. sugar
1/2 tsp. salt
1 tsp. cinnamon
1 2/3 c. evaporated milk

Prepare pastry.

FILLING: Heat oven to 425 degrees. Beat eggs in blender, beat in remaining ingredients. Pour into prepared pastry shell. Bake 15 minutes at 425 degrees. Reduce oven temperature to 350 degrees. Bake 45 minutes longer or until knife inserted in center comes out clean. Yields 8 servings.
