RED CABBAGE 
1 sm. head red cabbage
3 tbsp. bacon grease
2 med. sized apples, diced
1 c. water
4 tbsp. vinegar
4 tbsp. sugar
1/2 tsp. salt
1/4 tsp. pepper
1/2 tsp. ground cloves

Vinegar and sugar may be adjusted to taste - sweet and sour.

Remove coarse outer leaves from cabbage. Cut head into 4 pieces; remove hard core and shred finely. Melt bacon grease in a large pot. Add cabbage, water, vinegar, and spices. Cook until tender, about 1 1/2 hours. Stir frequently to avoid burning. Good side dish with pork or sausage.
