STUFFED PEPPERS | |
Red or green peppers (enough for family) 1 - 1 1/2 lbs. ground beef and or pork (very lean) 1/4 c. finely chopped onion 1 clove garlic, minced 1 c. cooked rice 2 c. spaghetti sauce (ie. Prego, Ragu) 2 c. grated cheese (Mozzarella, Cheddar, or Monterey Jack) Brown meat(s) several minutes; drain fat. Add onion and garlic. Cook until meat is browned. Add rice, 1 cup spaghetti sauce, and 1/2 cup of cheese. Add salt and pepper to taste. Mix well and stuff peppers. Arrange in small casserole dish (9 x 9 inch). Top peppers with remaining sauce and cheese. For Microwave: Cover and bake at 50% to 75% power for 15 minutes; rotate dish and repeat. For Oven: Bake at 350 degrees for 45 minutes, covered; then 15 minutes, uncovered. |
