BEEF STEW | |
2 to 3 lbs. beef stew meat cut in 1 inch pieces 1/2 c. vegetable oil 1 c. onion, diced fine 1 c. celery, diced fine 1 c. bell peppers, diced fine 1 c. ketchup 2 (16 oz.) cans tomatoes, cut in small pieces 3 med. carrots, diced 4 med. potatoes, diced Salt and pepper to taste Brown stew meat in vegetable oil in covered heavy fry pan until done. Remove meat and drain, reserving 1 tablespoon of liquid. Add onions, celery and bell pepper to liquid and saute until just tender. Add stew beef, cover with water, add potatoes and carrots and cook until tender. Add tomatoes and ketchup. Bring to boil and then simmer for 30 minutes. |
