CHICKEN AND HAM JAMBALAYA 
Chicken pieces (5 legs and 5 thighs)
2 onions, chopped
1 green pepper, chopped
3 or 4 cloves garlic, chopped
1 lg. can tomatoes
2 c. rice, uncooked
1 bay leaf
1/4 tsp. thyme
Fresh ground black pepper
Red pepper to taste
Ham pieces, as much as you have

Brown chicken pieces in Dutch oven. Remove as browned. Brown onion, green pepper and garlic in fat remaining in pan. Add uncooked rice and stir. Drain tomatoes well into a measuring cup; add water to make 3 cups. Chop tomatoes and add to pot with seasoning. Add ham, and juice mixture. Stir well and push all rice down in juice, bring to a boil. Cover and bake at 350 degrees for 30 minutes or so.
