ARTICHOKE NIBBLES 
2 jars (6 oz.) marinated artichoke hearts
1 sm. onion, chopped
4 eggs
2 tbsp. parsley, minced
1/2 lb. shredded cheddar cheese
1/8 tsp. each pepper, oregano and liquid hot pepper
1 clove garlic, minced
1/4 c. fine dry bread crumbs

Drain marinade from artichokes. Pour half of the marinade into 7x11 inch glass dish, discard the rest. Chop artichokes, set aside. Add onion and spices to dish, cook uncovered or microwave 4 minutes until onion is limp. Beat eggs, add eggs, crumbs, cheese and artichokes to dish. Blend thoroughly, cook uncovered 10 to 12 minutes or until set in center (cover with waxed paper in microwave). Cut in squares and serve warm at room temperature.

Since microwave ovens vary in power, you may need to adjust your cooking time.
