CHICKEN MONTEREY 
4 to 6 chicken fillets
2 eggs
Bread crumbs
3 tbsp. oil
1 lg. jar picante sauce or salsa
1 avocado
Monterey Jack cheese

Bread chicken in egg and bread crumbs and fry until golden brown. Blot grease. Place chicken in baking dish. Layer on top of chicken thin slices of ripe avocado, sauce and cheese slices. Bake covered at 350 degrees for 45 to 60 minutes. Diced onion or pepper may be added. Yellow rice is good side dish.
