BASIC WAFFLES 
2 eggs, separated
2 c. buttermilk or sour milk
2 c. flour
2 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1/2 c. butter, melted

Preheat waffle iron. Place egg yolks in large bowl, whites in small bowl. To yolks, add buttermilk; beat well. Add flour, baking powder, soda and salt. Beat until smooth. Stir in melted butter. Beat egg whites until soft peaks form. Fold into batter. Bake in iron, medium heat for 5-8 minutes or until steaming stops and waffle is golden brown.

Apple waffles: Add 1 medium apple, shredded and 1/2 teaspoon cinnamon.

Banana waffles: Place banana slices on batter before closing lid of iron.

Nuts: Walnuts or pecans are really good added to batter.
