BANANA WAFFLES 
1 3/4 c. sifted flour
2 tsp. baking powder
1/2 tsp. salt
1 tbsp. sugar
3 eggs, separated
2 - 4 tbsp. oil
1 1/2 c. milk
2 med. bananas, mashed

Sift first 4 ingredients into bowl. Make a well in center. Combine egg yolks, oil, milk and bananas in bowl; beat well. Pour banana mixture into dry ingredients; stir until just mixed. Fold in stiffly beaten egg whites. Bake in waffle iron using manufacturer's directions. Yields 4 servings.

Wow! This recipe turned out so well. I had bananas on my counter that needed to be used or tossed, and this recipe was perfect for it. I'd never whipped egg whites and folded them into anything before, but I was able to figure it out and it worked like a dream. My husband commented that these are his new favorite waffles. My preschooler didn't say anything because she was too busy shoving waffle into her mouth.

I have a 2 waffle (square) maker, and using a 1/3 cup to measure, it made 14 waffles for me.

This is an easy recipe with great results that will have you coming back for more. Folding in the egg whites makes these waffles light in texture. The only change I recommend is reducing bananas by adding one instead of two. Bananas carry much liquid making the waffles heavier in texture. These make for an awesome brunch!!
