PUMPKIN APPLE PIE | |
1/4 c. butter 3 med. apples, peeled, cored & coarsely chopped 1 tsp. ground cinnamon 1/4 tsp. ground allspice 1/4 tsp. ground nutmeg 1 tbsp. all purpose flour 1/4 c. apple juice 2 tbsp. granulated sugar 1 unbaked 9" pie shell 1 c. pumpkin 1 egg 1/3 c. granulated sugar 1/2 tsp. ground cinnamon 1/4 tsp. ground nutmeg 1/4 tsp. ground cloves 1/2 c. half and half Preheat oven to 425 degrees. Melt butter in a skillet over medium heat. Stir in apples, 1 teaspoon cinnamon, allspice, and 1/4 teaspoon nutmeg; cook 5 minutes. Stir in flour, apple juice and 2 tablespoons sugar. Cook 1 minute and remove from heat. Pour into pie shell. In a medium mixing bowl, combine pumpkin, egg, 1/3 cup sugar, 1/2 teaspoon cinnamon, 1/4 teaspoon nutmeg and cloves; beat until well blended. Stir in half and half. Carefully pour pumpkin mixture over apple mixture. Bake 15 minutes. Reduce heat to 350 degrees and bake 30 minutes more or until center is set. Makes 8 servings. |
