WILTED SPINACH SALAD 
1 lb. fresh spinach
6 slices bacon, chopped
3 tbsp. chopped onion
1/3 c. vinegar
1/3 c. water
2 tbsp. sugar
1/4 tsp. pepper

Wash spinach. Remove thick stems and bruised leaves. Drain well and set aside in salad bowl.

Place bacon pieces in 1 quart casserole. Microwave at high until bacon is crisp, 6-8 minutes, stirring after the cooking time. Remove bacon and set aside on paper toweling.

Add onion to bacon fat. Microwave on high until tender, 1 1/2 to 2 minutes. Add vinegar, water, sugar and pepper. Microwave at high until boiling, 3-6 minutes. Immediately pour over spinach. Add bacon and toss well. Serve immediately.

Since microwave ovens vary in power, you may need to adjust your cooking time.
