PECAN PUFFS 
2 egg whites
Pinch of salt
1 c. sugar
1/2 tsp. vanilla
2 c. pecans, chopped
Pinch of cream of tartar

Beat egg whites, add salt and cream of tartar. Gradually add sugar then vanilla. Fold in pecans. Spoon on greased cookie sheet, bake at 200 degrees for 1/2 hour. Then raise oven to 350 degrees and bake until tan.
