PEACH COBBLER | |
3 lbs. peaches (about 10) 1 c. + 1 tbsp. sugar 1 tbsp. lemon juice 1/4 tsp. nutmeg 1 1/4 c. + 3 tbsp. flour 3/4 tsp. baking powder 1/4 tsp. baking soda 1/2 tsp. salt 1/3 c. vegetable shortening (Crisco) 2/3 c. buttermilk Heat oven to 375 degrees. Butter 2-quart baking dish. Peel and slice peaches. Toss with 1 cup sugar, lemon juice, nutmeg and 3 tablespoons flour. Put this mixture in baking dish. Combine the remaining 1 1/4 cups flour, 1 tablespoon sugar, baking powder, baking soda and salt. Cut in the shortening. Stir in buttermilk and mix until moistened. Drop by spoonfuls over peaches. Bake until golden brown (about 30 minutes). |
