ARROZ CON POLLO 
2 tbsp. oil
1 med. onion, cut up
1 med. green pepper, cut up
1 tbsp. garlic (minced)
1 (16 oz.) can whole tomatoes (quarter the tomatoes)
1 whole chicken cut up or 4 chicken breasts
1/2 tsp. Bijol
Salt to taste
1 c. rice
1 1/2 c. water

Boil chicken about 20 minutes. Saute in oil garlic, onion, green pepper until onion and pepper are limp. Add tomatoes. Cook down on medium low heat about 20 minutes. Add water, bijol, salt, rice and chicken. Stir well. Cook on low heat about 40 minutes until rice is tender. Stir occasionally.

Chicken may be kept on bone or off bone cut into bite size pieces.
