3 eggs 1 1/2 c. sugar 1/3 c. oil 2/3 c. peeled zucchini, liquified in blender 2 c. peeled zucchini, grated 2 tsp. cinnamon 1 tsp. baking soda 1 tsp. baking powder 3 c. flour 1 1/2 tsp. real vanilla 1 tsp. lemon peel 1/2 tsp. ground coriander 1 tsp. allspice 1 tsp. nutmeg Beat the eggs until foamy, add sugar slowly and heat. Add the oil, vanilla, zucchini and stir well. Add the dry ingredients and heat slowly, pour into two greased and floured 9 x 5 inch loaf pans. Bake at 325 degrees for 50 minutes. |
