OVEN STEW | |
2 tbsp. all-purpose flour 1 1/2 tsp. salt 1 1/2 - 2 lbs. chuck, cut in 1 inch cubes 2 tbsp. shortening 2 (10 1/2 oz.) cans condensed tomato soup 1 1/2 c. chopped onion 1/2 tsp. dried basil, crushed 4-5 med. potatoes, pared and cubed 4-5 med. carrots, sliced 1/2 c. dry red wine or water Combine flour, salt and dash pepper; coat meat cubes in seasoned flour. Brown in hot shortening in Dutch oven. Add soup, 2 1/2 cups water, onion and basil. Cover and bake in 375 degree oven for about 45 minutes. Add potatoes, carrots and wine. Cover and bake for 1 1/2 hours longer or until tender. Great with venison! Simply substitute venison for beef and follow directions. Makes 4-6 servings. |
