“TURKEY TETRAZZINI” IS IN:

TURKEY TETRAZZINI 
2 or 3 cups cooked turkey
6 oz. spaghetti, cooked
1/4 c. butter
1/2 c. flour
2 2/3 c. chicken broth
1 c. cream
1/4 c. sherry
1 tsp. salt (or to taste)
pepper, to taste
1/2 lb. mushrooms
1/2 c. chopped green peppers
1 c. grated Parmesan cheese

In large pot, melt butter; add flour and whisk. Add broth, wine, cream, seasonings, cheese, turkey, mushrooms and green peppers. Place cooked spaghetti in bottom of baking dish and top with tetrazzini mixture.

Bake at 325°F for 30 minutes.

Makes 2 or 3 servings.

Piers probably won't like the mushrooms but you could substitute them for something else. It tastes great and is super easy and great for leftover turkey!

I doubled this recipe and ended up with Turkey Tetrazinni soup! Next time I'll double all ingredients except the sauce. I added onion and sun-dried tomatoes. Also traded green peppers for peas.

I cooked this and my family loved it! I added a little extra ingredients. I added a mixture of chopped frozen green, red bell peppers mixed with onion and celery. I also added 2 cloves of chopped garlic and fresh onion. I used chicken breast instead of turkey. I boiled my chicken breast and used the broth from that. I did whole grain pasta to add a little healthy fiber to it. Delicious!

Great recipe! I added a cup of frozen peas and carrots, a half cup of diced onions, a half cup of chopped bell peppers, and a tsp of minced garlic. Everyone loved it!

Great Recipe! It might be best to: add chix broth, bring the Rue to a boil then take off heat, add cream then fold in turkey/vegies/cheese and then pour over the noodles.
