MARIAN'S CUCUMBER SALAD 
3 lg. cucumbers
2 tbsp. salt
1/2 c. cider vinegar
1/4 c. sugar
2 tbsp. olive oil
1 med. onion, sliced

Peel and slice cucumbers. Add 2 tablespoons salt and soak at least 1/2 hour. Rinse thoroughly in cold water. Drain. Slice onion and add to cucumbers. Make a syrup with the cider, vinegar, sugar and olive oil. Pour over onions and cucumbers and refrigerate. Cider vinegar definitely makes a difference. Yields 6 servings.
