ZUCCHINI BREAD | |
3 eggs 1 c. Crisco oil 2 tsp. vanilla 2 c. sugar 2 c. shredded zucchini 1 c. crushed pineapple, well drained 3 c. flour 2 tsp. baking soda 1 tsp. salt 1 tsp. cinnamon 1/2 tsp. nutmeg 1 c. chopped nuts 1 c. raisins Beat eggs. Add oil, sugar and vanilla. Beat until thick and foamy. Stir in zucchini and pineapple. Combine dry ingredients. Stir gently into zucchini mixture. Pour into 2 greased and floured loaf pans. Bake for 55 minutes at 350 degrees. |
