PICANTE' SAUCE 
Tomatoes (approximately 1/2 bu.), scald, peeled, and cut
5 lg. onions, chopped
4 c. green pepper, chopped
12 cloves garlic, chopped
24 jalapeno peppers, chopped (wear gloves)
1 (12 oz.) can tomato paste
2 to 4 tbsp. vinegar
Salt and pepper to taste

Simmer all ingredients for 1 hour (until you're eyes water). Pour into jars and seal. Makes approximately 15 pints.
