MORNING GLORY MUFFINS 
1/2 c. raisins
2 c. grated carrots
1/2 c. peeled diced apples
1/2 c. chopped pecans
1/2 c. grated coconut
3 eggs
2 tsp. vanilla
1/2 c. melted butter
1 c. sugar
1/4 c. brown sugar
1 c. all-purpose flour
1/2 c. bran cereal
2 tsp. baking powder
1 tsp. cinnamon

Grease a 12 cup muffin pan. Preheat oven to 350 degrees. Soak raisins in hot water for 15 minutes, then drain well.

Combine the grated carrots, diced apple, chopped nuts and coconut in a bowl. Set aside. In a large bowl beat the eggs until they are thick and lemon colored. Beat in the vanilla, butter, sugar and brown sugar. Mix well and set aside.

In another bowl combine the dry ingredients. Add the carrot and apple mixture. Combine this with the egg-sugar mixture, stirring lightly, just until flour is moistened. Spoon the batter into greased muffin cups and bake for 25 minutes, or until they test done.
