POPPY SEED CHICKEN 
6 chicken breasts, cooked and cubed
2 stacks Ritz crackers
2 sticks butter
1 can cream of chicken soup
1 carton sour cream
2 tbsp. poppy seeds

Crush crackers in food processor. Melt butter and mix with cracker crumbs. Lien bottom of baking pan with 1/2 crumbs. Set remaining 1/2 aside.

Mix cubed chicken, soup, sour cream, and poppy seeds. Pour into baking dish on top of crumb mixture. Spread remaining 1/2 of crumb mix over chicken. Bake at 350 degrees for 30 minutes.

To double recipe, 2 times chicken, soup, sour cream, and 3 tablespoons of poppy seeds.
