MUSHROOM STUFFED FISH ROLLS 
1 lb. skinless fish fillets
1/2 c. shredded Swiss cheese
4 oz. sliced mushrooms, cooked
1/4 c. plain yogurt
1 tbsp. snipped chives
1 tbsp. chopped pimento
2 tbsp. fine dry bread crumbs
1/2 tsp. paprika
1 tbsp. plain yogurt
1/2 tsp. salt and pepper

Combine cheese, mushrooms, 1/4 cup yogurt, chives, pimento, salt and pepper. Spread mixture on fish. Roll up fillets jelly roll style and place seam side down in a greased 10 x 6 x 3 baking dish. Combine bread crumbs, paprika. Brush fish with the yogurt and sprinkle with bread crumb mixture. Bake at 350 degrees for 20-30 minutes. Fish fillets suggestions: flouder, pike, sole.
