GUACAMOLE 
3 ripe avocados, pitted
1/2 tsp. salt
1 Serrano chile, minced, including the seeds
3 cloves garlic, minced, pressed
2 tbsp. chopped fresh cilantro leaves (optional)
2 whole green onions, chopped
Freshly squeezed juice of 2 limes

Slice the avocados in half and remove the pits. Use a spoon to scoop out the flesh. Then purée the avocados using the tongs of a fork. Mix with salt, Serrano chile, garlic, cilantro (if desired), green onions, and lime juice until well combined.

Adjust seasoning as desired.

Note: May be prepared in a blender or food processor. If preparing up to 12 hours in advance, use Fruit Fresh (Vitamin C) to help preserve color. Serve immediately or cover tightly with plastic wrap pressed directly onto surface to prevent browning and refrigerate up to 1 day.
